Almonds. Dates. Coconut. Yes, they taste amazing. But when you combine them together you create belly-filling Bliss Balls that are the food equivalent of laying on a soft, overstuffed sofa.
They’re round and comforting; they process in less than 10 minutes, my kids love them, my husband can’t keep his hands off them and me, I’m just obsessed.
Superfood bliss balls definition: Gooey Medjool dates combined with almonds, chia seeds, shredded coconut, bound with coconut nectar, coconut oil, tahini, pulsed into a moist pile, formed into very large balls of decadent, sweet chewiness.
Let the dipping begin.
Rogue out on whatever toppings you like; I used crushed almonds, chia seeds, cacao nibs and Matcha powder.
Sometimes it’s the little things that make us happy.
Happy Mother’s Day!
- 1 cup raw almonds
- 6 medium Medjool dates
- 2 tablespoons unsweetened shaved coconut
- 1 tablespoon chia seeds
- Pinch of Pink Himalayan salt
- 2 Tablespoons of coconut oil (melted)
- 1 Tablespoon of coconut nectar
- 1 Tablespoon of Tahini
- Combine all ingredients in your food processor.
- Pulse until it forms into a moist ball.
- Form into balls, using your hands or an ice-cream scoop.
- Dip, Coat, and roll.
- Eat to Live!
BTW- I put them in the refrigerator to marry the flavors. Delish!

Great question. Coconut Nectar is the sap from the coconut tree. I prefer it over Agave, due to its low glycemic content. It has mild, sweet flavor that I love. I use it in my desserts and sometimes in my tea. You should give it a try, you can find it at your local Whole Foods. Thanks, April!
