HOW TO MAKE A DELICIOUS WATERMELON SALAD

This watermelon salad is an assortment of hydrating flavors, colors, and textures that check all the boxes of summer.

Ingredients
- 8 cups of seeded watermelon cut into cubes (Remove seeds if you desire)
- 3 pounds of cherry tomatoes more colorful the better
- 1 teaspoon of pink sea salt
- 4 cups of Arugula
- 1 bunch of chopped basil leaves
- 5 Tablespoons of Avocado oil, divided
- 2 Tablespoons of chopped fresh mint
- 1½ Tablespoons of Apple Cider Vinegar
- Balsamic vinegar glaze
- ½ teaspoon Black pepper
- 2 ounces of organic Feta Cheese
Instructions
- Combine watermelon and tomatoes into a large bowl sprinkle with salt, and gently toss to combine ingredients. Set aside for 10 minutes.
- Combine arugula and 1 tablespoon of avocado oil in a medium bowl. Toss to coat. Add to watermelon mixture, and toss gently to coat watermelon and tomatoes.
- Whisk basil, mint, vinegar, pepper, and the remaining 4 tablespoons of avocado oil in a small bowl.
- Drizzle over the watermelon mixture. Sprinkle with feta cheese and drizzle with balsamic vinegar glaze. Then serve with a SMILE.
