Remember when I mentioned that we need to talk?
Well, the time has come my friends.
I’m a pescetarian.
In April of this year, I made a life-changing decision to eliminate meat from my diet with the exception of fish and seafood. This is my second attempt at transitioning into a vegan lifestyle. This go around, I’m transitioning at a much slower pace to prevent relapsing.
My first attempt ended after 13 months, with a chicken wing in one hand and a cheeseburger in the other. Not a good look!
You’re probably wondering, “what is a pescetarian? ” A pescetarian is a vegetarian who includes seafood in their diet excluding: chicken, red meat, pork, bison, cats, dogs, frogs, snakes, rodents,,, you get the point.
I’ll share the details with you in a future post titled, “Why I became a pescetarian-AGAIN”.
So now you’re thinking, what a hypocrite! So why am I drooling over these plump, juicy drumsticks if you don’t eat chicken? Fair enough.
Answer: My husband and children are meat eaters, at least for now. Due to my bossy tendencies, that may change.
I’m a firm believer in Free will-“the ability to act at one’s discretion” at least where my husband is concerned. Our children, on the other hand, generally adapt my lifestyle of eating and little do they know, Mommy has devised a plan to slowly remove meat from their diet, the power of MOMS we rock!
So, what does dinner look like in our household?

Last week the family wanted chili pepper chicken, I prepared it even though I don’t eat meat. I had a delicious meatless version that I can’t wait to share with you (blog post coming soon!).
So, what does one do when the family eats meat, and you don’t? Do this, break out the skillet and make this real food chili pepper chicken meal made with only eight ingredients: drumsticks, chili pepper paste (I love this stuff), fresh parsley, salt, pepper, garlic powder, oil, and lime.
Season drumsticks with salt and pepper, garlic powder, and generously apply chili pepper rub. Fry drumsticks for 3-5 minutes then place in the oven.
When done, squeeze with lime juice (totally optional) and garnish with fresh parsley.
It’s that easy, no harm no fowl foul 🙂 (figuratively speaking).
How To Prepare Skillet Chili Pepper Chicken
- 6 chicken drumsticks with skin on
- Fresh parsley leaves
- 6 teaspoons of red chili pepper paste (I used Gourmet Garden)
- 1 teaspoon of garlic powder
- ¼ teaspoon of black pepper
- salt and pepper to taste
- 1½ tablespoon of oil
- Lime
- Preheat oven to 400 degrees
- In a large bowl season drumsticks generously with salt and pepper add in garlic powder and black pepper. Once seasoned, add in 6 teaspoons of red chili pepper paste. Rub chicken on both sides completely covering drumsticks.
- Heat oil over medium heat in a cast-iron skillet. Once hot, add in drumsticks sear until golden brown, turning halfway through for 2-3 minutes.
- Remove skillet from stove and place in preheated oven for 15-20 minutes until done.
- Once done, lightly squeeze with lime juice then garnish with fresh parsley.

Tonya, I love that this is only 8 ingredients! It looks pretty awesome. And I hear you about cooking things for the fam that you don’t eat. I don’t really eat red meat and I don’t really consume dairy (lactose issues), but my kids and husband love it, so it’s often on our dinner menu. I can’t wait to see the vegetarian version of this 🙂
