The husb is celebrating his ## birthday today! Yay! He’s so lucky to celebrate his birthday while on vacation it doesn’t get any better than that or does it?

It does! I surprised him this morning and served him breakfast in bed with these fluffy goodness delights, sweet, melt-in-your-mouth pecan pancakes (his favorite). The smell of these loves woke him up with a BIG SMILE on his face.
He enjoyed breakfast in bed, and I promptly returned to dreamland. ย After all, that’s what vacation is all about right? Eat, sleep repeat you have to hold true to tradition. ย ๐
HOW TO MAKE PANCAKES WITH BUTTER PECAN SYRUP AND MAPLE-PECAN BUTTER
PANCAKES WITH BUTTER PECAN SYRUP AND MAPLE-PECAN BUTTER

Serves: 6-8 pancakes
Ingredients
- 1½ cups of all-purpose flour
- 1 tablespoon brown sugar firmly packed
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 cup of almond milk
- 2 eggs
- 2 tablespoons melted unsalted butter
- ½ teaspoon vanilla extract
Instructions
- Preheat griddle or skillet to medium heat
- In a large bowl combine and stir together flour, brown sugar, baking powder, baking soda, and salt.
- In a medium bowl whisk milk, eggs, melted butter, and vanilla. Mix until smooth consistency.
- Add liquid mixture to flour stirring until combined.
- Add 1 tablespoon of butter to griddle or skillet. Add ⅓ cupfuls of batter to griddle or skillet. Cook for 3-4minutes or until the edges are brown and bubble-free. Turn and cook until browned. Repeat the process with the remaining batter.
- Serve with Butter Pecan Syrup and Pecan maple butter.
Notes
Pecan Maple Butter:
1 cup of soft butter
1 cup of chopped pecans
3 tablespoons of maple syrup
In a medium bowl, mix all ingredients until combined. Serve immediately or cover and refrigerate.
Butter Pecan Maple Syrup:
1 cup chopped pecans
1/2 cup butter
1 cup maple syprup
1/2 teaspoon vanilla
Pinch of cinnamon
Over medium heat, combine ingredients in a saucepan. Bring to boil, and then simmer for 5-8 minutes on low heat. Drizzle over pancakes.
