HAPPY BIRTHDAY, MYA!!! 🙂
Today is my daughter’s 8th birthday. She wanted me to wish her happy birthday on the blog it was one of her birthday wishes and in full disclosure, I’m bound by the pinky swear.
In case you aren’t familiar with the pinky swear, it’s an act of hooking pinky fingers together in an attempt to seal the deal, and in our household, it’s a BIG DEAL. BIG DEAL.
In celebration of Mya’s birthday, let’s have some olive oil lime cake.
I dig this cake it screams eat me in 0.5 seconds with your eyes wide shut.
I made this cake a month ago, and I knew then it was destined to re-enter my life before the summer ended, and for good reason.
This cake is so moist with the use of olive oil over butter gives it the moisture it deserves with a subtle taste of flavor.
The original recipe calls for lemons, but I prefer the use of limes because they add a slight sweet tanginess that proves to be the perfect mouth-puckering citrus.
About that lime glaze, it’s velvety in texture with flecks of lime zest sprinkled throughout and when spooned on top hardens creating a soft, crunchy top that sends your taste buds on cloud nine. You can serve warm or cooled with a cup of tea.

How To Prepare Olive Oil Lime Cake With Lime Glaze
- 1½ cups of flour
- 1½ cups sugar
- 2½ teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 lime zest
- ½ cup almond milk
- ¼ cup lime juice (1-2 limes)
- ¾ cup olive oil
- 1 teaspoon vanilla
- 4 eggs
- Lime Glaze
- 2 cups of powdered sugar
- ½ cup of lime juice (2-3 limes)
- 1 tablespoon of lime zest
- Let's get baking!
- Preheat oven 325 degrees.
- Spray down an 8 cup bundt pan with non-stick spray and lightly coat with flour then set aside.
- Next up-THE MIXING BOWL!
- In a large mixing bowl combine flour, sugar, baking powder, baking soda, salt, almond milk, lime zest, ¼ cup of lime juice, olive oil, vanilla, and eggs. Beat on low until all ingredients are well combined. DO NOT OVERMIX!!
- Pour batter in prepared bundt pan then bake for 35-50 minutes until golden brown and toothpick come out clean.
- Remove cake from oven allow to cool in pan for 10 minutes. Once cool pour ¼ cup of the glaze over the cake to allow it to soak in, then turn cake onto serving plate and pour remaining glaze over cake and sprinkle with lime zest. Enjoy Family!
Combine powdered sugar, ½ cup of lime juice, and half of the lime zest in a bowl, whisk until well combined. Use the remaining zest to garnish the cake.
