So you thought I took this birthday thing a little too far and totally checked off the grid huh?! Ha! Ha! no, no…although I did have a wonderful day with the family and the weather was soooo picture-perfect, but all great things must come to an end.

Before I jump into these Mexican cauliflower fritters one more announcement, I’m on Instagram finally right. Now for these Ronda Rousey knockout Mexican cauliflower fritters.
In the cauliflower corner:
We have mildly spiced plump fritters coated with green onions, jalapenos, cilantro all tossed in an earthy blend of spices to the likes of smoked out paprika, garlic powder, and chili powder to name a few, but it doesn’t end there my friends you can’t have Mexican without the cheese. ENTER: COTIJA CHEESE! That’s right, I crumbled in one of my all-time faves.
The cotija cheese delivers the salty element that balances perfectly with the spice blend and the best part, cotija cheese slightly melts due to its hard texture, but that’s okay because you get the whole cheese crumble in. your. mouth.
Side note: The recipe calls for salt and pepper, go light on the salt in conjunction with the cotija cheese. I’m just saying, no need to raise your pressure levels. 🙂
In the mango corner: we have sweet, fresh, bright-colored mangoes drowned in a sour cream base, drizzled with lime juice, and sprinkled with cilantro. I mean come on, need I say more, but I will…
Here’s what you do, take a fritter slather on this insanely, delicious mango sour cream just like this, and tell me what you think. Deal? Good.
HOW TO MAKE MEXICAN CAULIFLOWER FRITTERS WITH MANGO SOUR CREAM
- Half medium-sized cauliflower, thinly sliced
- 1 jalapeno, seeded and minced
- 1 green onion chopped
- ¾ cup flour
- ½ teaspoon baking powder
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- sea salt and cracked pepper to taste
- 2 eggs
- ⅓ cup chopped cilantro
- 1 cup of cotija cheese crumbled
- olive oil for frying
- MANGO SOUR CREAM
- ½ cup sour cream
- 1 teaspoon lime juice
- ¼ cup diced fresh mango
- 1 teaspoon finely chopped cilantro
- Cut cauliflower in small florets.
- Combine flour, baking powder, chili powder, smoked paprika, salt, pepper, and eggs stir well to combine. Fold in cauliflower, jalapeno, green onion, cilantro, and cotija cheese to coat.
- Heat oil in a large frying pan over medium heat. When the oil is hot add 2 tablespoons of cauliflower mixture in batches, fry for 2 two minutes on each side until golden brown. Drain over paper towels serves with mango sour cream so friggin good!
In a small mixing bowl, add all ingredients and whisk until combined. Chill, then serve.
***When adding salt go very light just a pinch is fine*** The cotija cheese is very salty.

Tonya, these sound beyond delicious! They sort of remind me of fried fritters that my mom and mother in-law make with cauliflower and batter made with chickpea flower (it’s an Indian dish). The spice and acid sound amazing, and the mango sauce, wowza! Too good to pass up! And congrats on the new camera! I can’t wait to see just how much more gorgeous your photography becomes with a new lens.
