Rise and Shine, cute Muffins! Rise. And. Shine. Just what I need to get me over hump day. This has been one hectic week thus far, let’s see. It’s tax season. It’s tax season, did I mention it’s tax season? Ugh! And I have the distinct honor and pleasure *side eye* of preparing our taxes right before we leave for vacation. Ain’t that a trip! But I’m not one to complain. 😉
Because my week just got sweeter with these golden delights. To satisfy my insatiable muffin-related desires, these muffin loves were baked 1, 2, 3 times! Who can’t resist a batch of warm muffins fresh from the oven? Not, I. These muffins have a textured golden-brown top, moisturized with honey throughout + they’re cute. These little Miss. Muffins are worth waking up to!
- 2 cups all-purpose flour, sifted
- ¼ cup sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup (1 stick) cold butter
- ½ cup of honey
- ¼ cup coconut milk
- ¼ cup evaporated milk
- 1 egg
- 1 teaspoon vanilla extract
- Preheat oven to 375 F.
- In a large bowl combine flour, sugar, baking powder, and salt. Cut in butter until mixture is a crumbly texture.
- In a small bowl whisk honey, coconut milk evaporated milk, egg, and vanilla.
- Slowly stir honey mixture into crumb mixture, mix (DON'T OVER MIX) until mixture is soft and moist.
- Lightly grease a muffin pan with nonstick cooking spray
- Spoon Fill muffin pan ⅔ full with mixture
- Bake for 15-20 minutes until muffins are round and brown or until a toothpick comes out clean
- Serve warm with a smile
