I’m living under cold, dark, gloomy, gray skies, my friends. Literally!
I woke up to a rainy morning on Sunday, and it’s been raining ever since. I went outside on Monday and nearly froze my face off. The winds bullied me back indoors with what felt like a roundhouse kick to the face. {FYI: I’ve never been roundhouse kicked in the face.}
I’m still recovering from a relaxing weekend that included listening to Adele’s ’25’ cd on repeat and devouring these big, soft, and crumbly pomegranate scones with an unforgettable scent of butter, drizzled with pink PM glaze that’s delicious, sweet, and undoubtedly the best scone I’ve made.
It’s been a while since I last cooked with POM seeds. The last recipe I made was this grilled eggplant, and that was in April, so you’re due for a taste of these ruby arils.
I can’t get enough of these pomegranate scones, if you ask me, they’re perfect. They’re buttery, moist, and sturdy enough to withstand the tea dunk that you must subject them to. Don’t worry, how-to instructions will be provided at the end of this post.
Sprinkled with crunchy, granules of turbinado sugar collaborates perfectly with the tart pomegranate arils that burst in your mouth, one bite after another, after another, after another.
How about that glaze tho? It’s pretty right?! Colored with a funky, pinkish hue made with a splash of pomegranate juice combined with powdered sugar that just works well and soothes my soul.
So this is how I see it, you’ve got a couple of options, here.
OPTION 1: You can eat them plain with a cup of coffee, that’ll be a pleasant experience.
OR
OPTION 2: You do the same thing, only drizzle pomegranate glaze on top, this too will be very satisfying.
OR! OR!
OPTION 3: You can brew up an 8 oz. cup of raspberry tea, methodically place three scones on your plate, take a large spoon and pour on a thick coating of pomegranate glaze over each scone, take a shower, when you return your tea will still be hot, the glaze will have hardened, dip your scone in your tea, eat it like your singing HELLO, by Adele in the shower and no one is watching, leaving glorious gobs of pomegranate glaze all over your rosy cheeks, then wash it down with gulps of raspberry tea and wipe your face with that wool, Polka dot sweater that Uncle Bob bought you for Christmas and make a beautiful noise of satisfaction Mmmmmmmmmmm then have another, and another.

How To Prepare Homemade Pomegranate Scones
- ¾ cup of pomegranate arils
- 3¼ cups flour
- ½ cup + 1 tablespoon turbinado sugar
- 3 tablespoons brown sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ¾ cup cold butter cubed
- 2 teaspoons vanilla extract
- ¼ cup + 1 tablespoon heavy whipping cream
- ⅓ cup almond milk
- ¼ cup of pomegranate juice
- 1 cup of powdered sugar
- Turn on the oven to 375 degrees
- FIRST
- In a large bowl combine flour,1/2 cup of turbinado sugar, baking powder, and salt.
- SECOND
- Pull out your pastry cutter or you can use a fork if you don't have one. Cut in butter until the mixture takes on a crumbly texture.
- THIRD
- Mix in ¼ cup heavy whipping cream, stir in almond milk and vanilla. Mix until all dry ingredients are moisturized. Lastly, stir in your pomegranate arils.
- FOURTH
- Lightly sprinkle flour on the surface pat out dough and form in a 10-inch circle. Check out my circle, yeah, like that. Cut into 8 wedges.
- Lastly, place scones on a prepared pan lined with parchment paper, then brush the scones with 1 tablespoon of heavy whipping cream, then sprinkle with 1 tablespoon of turbinado sugar.
- Now the fun part, bake for 15-20 minutes until scones are golden or until the toothpick has little to no crumbs.
- Allow cooling for 5 minutes then drizzle with glaze. Best served warm with a cup of tea! 🙂
1/3 cup of pomegranate juice
1 cup of powdered sugar
In a small bowl, combine ingredients, whisk until well combined once combined, drizzle over scones.
