It’s time to add a little spice in your life my friend, and you and I both know you need it.

Because according to the calendar, summer is coming to an end; The 4th of July happened, the Olympics came and went, and Labor day is less than two weeks away.

As much as I hate to admit it, for all practical purposes, summer is over; you need all the heat you can get before the cold and crisp temperatures begin.

Can you imagine your body being fueled on mighty chickpeas that are nutrient dense with iron all covered in a spicy, creamy chipotle sauce with sweet bites of dried cherries speckled throughout?

This salad has been in my life on a full-time rotation. No, really, between having my head buried in homeschool planning for the upcoming school year, and adding the final touches to our home remodel, this wholesome salad is my life line.

Serves: 3 to 4 servings
Ingredients
  • Chipotle Chickpea Salad Base:
  • 1 can of organic chickpeas
  • 3 green onions chopped
  • ½ cup of Chipotle Vegenaise
  • ¼ teaspoon red pepper flakes
  • ½ cup of dried cherries
  • salt to taste
Instructions
  1. Rinse and drain chickpeas.
  2. In a mixing bowl add chickpeas. Add the green onions, chipotle veganaise, red pepper flakes, dried cherries and season with sea salt, to taste.
  3. Stir until well combined.
