Breaking: Chipotle Chickpea salad coming in spicy!
It’s time to add a little spice in your life my friend, and you and I both know you need it.
Because according to the calendar, summer is coming to an end; The 4th of July happened, the Olympics came and went, and Labor day is less than two weeks away.
As much as I hate to admit it, for all practical purposes, summer is over; you need all the heat you can get before the cold and crisp temperatures begin.
Can you imagine your body being fueled on mighty chickpeas that are nutrient dense with iron all covered in a spicy, creamy chipotle sauce with sweet bites of dried cherries speckled throughout?
I can.
This salad has been in my life on a full-time rotation. No, really, between having my head buried in homeschool planning for the upcoming school year, and adding the final touches to our home remodel, this wholesome salad is my life line.
Let’s talk Chipotle Vegenaise.
Here are the FACTS:
- Vegan
- Gluten-free
- Dairy-free
- Soy-free
- Non-GMO (Genetically Modified Organism)
As the expression goes, consider the alternative… I’m just saying.
This fiery chipotle sauce is the holy grail ingredient. It’s rich with a smoky, spicy taste that has real chipotle peppers throughout that make this chickpea salad kick.
Let’s be honest; you have a real problem resisting a 5 ingredient recipe made with real food don’t you?
Barring some huge change of events, this chickpea salad will be on your lunch table tomorrow and I know this.
So with that said, eat it over a bed of crisp lettuce, with a generous dash of red pepper flakes, topped with dried sweet cherries.
Yep! Like this.
- Chipotle Chickpea Salad Base:
- 1 can of organic chickpeas
- 3 green onions chopped
- ½ cup of Chipotle Vegenaise
- ¼ teaspoon red pepper flakes
- ½ cup of dried cherries
- salt to taste
- Rinse and drain chickpeas.
- In a mixing bowl add chickpeas. Add the green onions, chipotle veganaise, red pepper flakes, dried cherries and season with sea salt, to taste.
- Stir until well combined.
