Hey You! Happy Monday! I made a batch of, peanut butter white chocolate chip cookies. Do you want? Don’t be shy we’re not strangers well, technically, but we’re getting to know each other right? Did I mention gluten-free peanut butter cookies? There’s that SMILE!!
Cause who doesn’t like creamy, chunky peanut butter? When I was young like three years ago, *wink, wink* I would scarf down peanut butter from the jar like excavation style that thang. I know, I know what will the children think right?
These chunky bite-size, healthy, nutty nuggets are TOO CUTE to eat well… almost too cute. You’ll get over it and be all COOKIE monster on me before you know it you’re ten cookies in. Made with only six ingredients and NO flour hence gluten-free. Don’t let the size fool you, these mighty morsels will knock your taste buds OUT with a Sahhhweet ending. HELLO!!

THE KITCHEN REMODEL UPDATE. Mr. Murphy, you know him, his last name is Law- yeah him. He made a slight delay change in plans. Last week we selected our granite stone for the countertops, it’s soooooooo beautiful!!! I can’t wait to show you. Look out for Before/Demo pics sometime next week I pinky promise!
So we picked out the stone last Monday, it was scheduled to be delivered to the fabricator on Wednesday, but now it won’t be delivered until Monday like TODAY Monday. I know I should’ve put a nerve on the ice, but I get it. I co-own a construction company, so I’m familiar with the whole, “There’s been a minor delay ” process. What can you do? It’s the nature of the beast. Maybeeee, if I feed the beast these peanut butter white chocolate chip cookies the beast would cooperate and play nicely you think?
If you have 20 minutes to spare, bake a batch of gluten-free peanut butter white chocolate chip cookies, they’re worth the 20-minute investment. I can give you 20 reasons why you should and here’s 1.

How To Prepare Gluten-Free Peanut Butter Cookies
- ¼ teaspoon salt
- 1 large egg white
- 1 cup reduced-fat chunky peanut butter
- ⅓ cup sugar
- ¼ cup brown sugar
- ¼ cup white chocolate chips (I used Nestle they're Gluten-Free)
- Cooking spray
- Preheat oven to 375 F
- Medium bowl needed for salt and egg white, stir with a whisk until frothy. Then add peanut butter, sugar, brown sugar and white chocolate chips. Stir until all ingredients are combined.
- Use a (1 tablespoon) to divide dough into 20 little cute balls. Separate 2 inches apart on a baking sheet lined with parchment paper.
- Lightly coat fork with cooking spray, gently press the top of each cookie to form a crisscross pattern, and slightly press down, this is NOT the time to be heavy-handed.
- Bake at 375 F for 10 minutes or until lightly browned. Enjoy with Almond milk!!!

Tonya, when I clicked on your site and saw a photo of these cookies, my reaction was “Oh, wow!” I LOVE peanut butter. It’s my #1 junk food craving (even more than chocolate!). These look and sound amazing. I would definitely make 3 bathes. And I can’t wait to see photos of your updated kitchen!
