HOW TO MAKE FONIO AND TINY TOMATO SAUCE

Creamy fonio and tiny tomato sauce usher in fall properly. Tiny tomatoes stewed in hot sizzling butter with onions mounted on a creamy puddle of fonio make this dish hearty & delicious!

Serves: 6 servings
Ingredients
- 4 cups of black cherry tomatoes
- 4 cups of tiny cherry tomatoes
- 1 medium yellow onion sliced
- 5 Tablespoons of Vegan Earth Balance Butter
- 1¼ teaspoon of pink sea salt
- 2-3 springs of fresh oregano

Instructions
- In a large saucepan combine tomatoes, onions, butter, and pink salt. Cook over medium-high heat. Once the tomatoes begin to blister, and bubble reduce the heat to a simmer.
- Cook for 45 minutes stirring occasionally throughout until the butte begins to separate from the tomatoes and the liquid has reduced some.
- Once done, serve over cooked fonio, topped with fresh oregano. MMM, MMM GOOD!!

Fall, we’ve definitely been waiting on you! I love this time of the year. You’re right there, tomatoes are still a thing…and we have tons of tiny cherry tomatoes on our plants out back. What a great way to use them!
