MEXICAN CAULIFLOWER FRITTERS WITH MANGO SOUR CREAM

Ingredients
  • Half medium-sized cauliflower, thinly sliced
  • 1 jalapeno, seeded and minced
  • 1 green onion chopped
  • ¾ cup flour
  • ½ teaspoon baking powder
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • sea salt and cracked pepper to taste
  • 2 eggs
  • ⅓ cup chopped cilantro
  • 1 cup of cotija cheese crumbled
  • olive oil for frying
  • MANGO SOUR CREAM
  • ½ cup sour cream
  • 1 teaspoon lime juice
  • ¼ cup diced fresh mango
  • 1 teaspoon finely chopped cilantro
Instructions
  1. Cut cauliflower in small florets.
  2. Combine flour, baking powder, chili powder, smoked paprika, salt, pepper, and eggs stir well to combine. Fold in cauliflower, jalapeno, green onion, cilantro, and cotija cheese to coat.
  3. Heat oil in a large frying pan over medium heat. When the oil is hot add 2 tablespoons of cauliflower mixture in batches, fry for 2 two minutes on each side until golden brown. Drain over paper towels serves with mango sour cream so friggin good!
Notes
Mango Sour Cream

In a small mixing bowl, add all ingredients and whisk until combined. Chill, then serve.

***When adding salt go very light just a pinch is fine*** The cotija cheese is very salty.
