Cherry Jam! That’s what’s up!

Before I get into this summer in a jar, I hope you’re having a safe, fun-filled summer. I know I am. So much so, I almost forgot about my little blog on the interwebs.

June 21st came along, and the rest is #howisummer:

Amusement parks, museums, swimming, long nature walks, sun tanning, sipping fresh juice, devouring the living fruits, remodeling our entire home, binge-watching the Olympics, and having more fun than a human being is allowed to have on Snapchat.  If you aren’t following me on Snapchat, here’s my snapLeave your snap name in the comment section, and I’ll follow you back 👊🏽.

Now, let’s talk about this simple-easy, delicious cherry jam that you should make before the summer ends.

For the past 2 years, I’ve had my eye on canning, but never got around to it. So this year, I promised myself that I would make a jam recipe as my segue way into canning.

It’s easy, delicious and the start of something magical.

My recipe is fairly basic:  two cups of fresh cherries, half a cup of coconut sugar because it’s delicious, unrefined and has a taste of warm caramel all up in your mouth, a big squeeze of lime juice and coconut water because I’m fanatical about coconut water… what can I say.

Here’s what to keep out of your jam: white sugar, pectin (processed sugar) and the opinions of those who say you should add them.

DELICIOUS CHERRY JAM

Serves: 1½ cup
Ingredients
  • 2 cups of fresh cherries rinsed, pitted and sliced into halves
  • ½ cup of coconut sugar
  • 2 tablespoons of lime juice
  • ½ cup of coconut water
Instructions
  1. In a medium sized pot over medium heat, boil cherries in coconut water and lime juice for 5-10 minutes.
  2. Stir in coconut sugar.
  3. Cook for 15-20 minutes until the jam takes on a honey-like consistency, stirring occasionally.
  4. Once done, remove from heat and allow time to cool. Transfer jam to a mason jar.
  5. Enjoy!
