Serve up a bowl of chunky sweet potato salad with:
zesty, grassy cilantro, and scallions
yellow mustard with turmeric for a snappy bite and added flavor.
Toss in coral-colored, sweet chunks of sweet potatoes, coated with spices all dressed up in creamy dressing that will leave a sweet taste on the tongue tip.

CHUNKY SWEET POTATO SALAD

Serves: 6-8 servings
Ingredients
- RUB
- 2 Tablespoons paprika
- 1 teaspoon sea salt
- 1½ Tablespoon brown sugar
- 1 teaspoon black pepper
- 1 Teaspoon Chile powder
- ½ Teaspoon dry mustard
- SWEET POTATO SALAD
- 4 large sweet potatoes peeled and cut into chunks
- ¾ cup Earth Balance mayo or regular mayo
- ¼ cup cilantro
- 2 Tablespoons mustard with turmeric or regular mustard
- 2 Scallions thinly sliced
- FOR THE RUB:
- Mix the paprika, salt, sugar, pepper, chile, and dry mustard in a small bowl.
- Place sweet potatoes in a saucepan cover with cold water bring to boil until done 15 minutes. Drain potatoes put in a large bowl toss with 2 tablespoons of the rub. Set aside.
- To make the dressing mix the mayonnaise, cilantro, mustard, and scallions in a large bowl. Toss and cover potatoes with dressing mix. Garnish with cilantro. Place in refrigerator until ready to enjoy.
