Where do I begin? Okay… let’s start with our 7-day family vacation in Williamsburg, Virginia, and Virginia Beach. I had an AMAZING time: beaching, touring, sleeping in, eating out, reading, swimming, exploring- did I mention eating?
Is it me or, is breakfast better on vacation? I’m just saying…since returning from our much-needed retreat, my days have been long and busy I can’t accommodate blueberry brioche french toast with a glass of blueberry wine then go for a long walk. ๐
Sigh….our family vacation is in the history books, but guess what, I can relive it when I ย share my vacation photos with you guys YAY!!! ๐
Now that I’m back let’s talk blueberry brioche french toast. ย Warning! We’re gonna do this one with the blow, by blow details. Bring your appetite.
I found these iconic blueberries at a local farmers market I was drawn in by the dark cobalt blueberry color, and they taste so juicy and sweet and yet delicate all at the same time. I knew I wanted a blueberry topping, but it had to have a kick and by a kick, I mean a little “spirit” so I added blueberry wine. Yep! I sure did!!! I created a blueberry compote brewed in blueberry wine with a fragrant blueberry character, sugar, and get this lime juice!! I squeezed in some lime juice for a tanginess side note.
I’ll telling you Fall will have to take me on a full stomach of summer eats!!!

You can’t have brioche french toast without brioche so I found this quaint little market that sold freshly baked sliced brioche the moment I walked in I knew who I loved and it was this market, my senses went into greedy curiosity mode and believe me when this happens it’s not a pretty sight, I suddenly had this out of body experience with a bad case of; I want that, that, that, I’ll take two of those, 4 of these and a case of that.
Yeah, it was awful the husband could no longer bring himself to witness my moment of insanity, so he disappeared off to the deli where he did a little damage of his own, but yeah so I bought ย 4 loaves of sliced brioche.
I dipped each brioche slice into an egg mixture you can only dream of made with vanilla, lime zest, and milk turning once to coat each side.
After the BIG dip, I coated each slice in a blend of sliced almonds and oatmeal coating each side (don’t forget the edges) creating this marvelous nutty-oatey encrusted french toast.

Next,ย Iย fired up the griddle melted a pat of butter then grilled each side until it was nicely golden brown PERFECTION is what you’re aiming for.
Clearly, we’re ready to top this baby off with a blueberry compote topped with a ricotta whip made with ricotta cheese and powdered sugar. Hmmm…

What makes vacation breakfast so sweet? It’s not this gorgeous blueberry brioche french toast, but the moments created and the adventures shared with loved ones that will live with you forever.
How To Prepare Blueberry Brioche French Toast
- Brioche French Toast
- 6 large eggs
- 1½ cup almond milk
- 1 teaspoon lime zest
- 1 teaspoon vanilla extract
- ½ tablespoon of raw honey
- 1 loaf of sliced brioche
- ⅔ cups sliced almonds
- 1 cup of quick oats oatmeal
- non-salted butter
- Blueberry Topping
- 2 cups fresh blueberries (frozen will do)
- ¼ cup H2O (Water)
- ¼ cup sugar
- 2 teaspoons lime juice
- ADULT VERSION ADD: 2 tablespoons of blueberry wine to adult batch (totally optional, but highly recommended if you can find blueberry wine at your local wine/spirits store)
- Ricotta whip topping
- ⅓ cup of part-skim ricotta cheese
- 1 tablespoon of powdered sugar
- Brioche French Toast
- Preheat oven to 250 degrees.
- In a large pan, combine eggs, almond milk, lime zest, vanilla, and honey whisk set aside.
- Combine sliced almonds and oatmeal in a pan mix together then set aside.
- Dip brioche slices in the egg mixture as many as the pan will allow, turning once to coat each side.
- Then dip slices in almond, oatmeal rub turning once to coat each side-Don't forget the edges.
- Heat 1 tablespoon of unsalted butter on medium heat griddle or in a skillet-add coated slices to the griddle, cook for 2-3 minutes on each side until nicely browned.
- Once done, place cooked slices on a pan then place them in the oven to keep warm.
- Fry the remaining slices.
- Serve hot with blueberry topping and a dollop of ricotta whip. Yum in the Tum!! ๐
- Blueberry Topping
- Combine 1 cup of blueberries, water, sugar, and lime juice in a saucepan. (Add blueberry wine for the adult version)
- Allow to cook over medium heat for 5 minutes, then add the remaining blueberries cook for 8 minutes, stir frequently. Allow to cool for 1 minute serve warm.
- Ricotta whip topping
- Combine ricotta cheese and powdered sugar in a bowl, mix well serve over warm brioche french toast. Enjoy!!

I love Virginia Beach and love vacationing there. My cousin lived there for a few years and we visited a lot. Glad you guys had a great family vacation there. As for this french toast…LOVE IT!
