The question of the week: Why buy blueberry banana bread from your local bakery, when you can make it yo’ self?
And the answer is: Because if you never make it for yourself, you will never know how you like to make it for yourself {if that makes sense}, you’ll know exactly what’s NOT in it i.e. NO ADDITIVES & PRESERVATIVES and this will be one of the most enjoyable experiences in your lifetime that you will own, not some stranger in the kitchen.
With that said, let’s bake some blueberry banana bread squares.
Your recipe looks like this:
- 3 1/2 cups of Spelt flour
- 2 cups of blueberries
- 2 small bananas
- 1 teaspoon pink sea salt
- 3 teaspoons baking powder
- 1/2 cup coconut oil
- 3/4 cup coconut nectar
- 1 1/2 cup water
- 1/2 cup of ground walnuts
- 2 tablespoons of date sugar
Because it’s Monday, I’ll spare you the step by step details.

So yeah, blueberry banana bread squares are delicious. They’re moist with the perfect amount of sweetness with bites of blueberries and bananas throughout, topped with a toasty walnut crumb crust blanketed with a layer of date sugar that has butterscotch notes going on that will have you rethinking your breakfast ritual.

- For the Blueberry Banana Bread Squares
- *3½ cups of Spelt flour
- * 1 teaspoon sea salt
- * 3 teaspoons of baking powder
- * ½ cup coconut oil
- * ¾ cup coconut nectar
- * 1½ cup water
- * 2 small red bananas, sliced
- * 2 cups of fresh blueberries
- * ½ cup ground walnuts
- * 2 tablespoons of date sugar
- Preheat oven to 400 degrees.
- In a large mixing bowl combine Spelt flour, sea salt, baking powder then whisk to evenly distribute dry ingredients. Mix in coconut oil, coconut nectar and water stir until well combined.
- Gently stir in blueberries and banana slices into the batter. Pour dough into a
lighltly greased prepared pan (I used coconut oil to grease the pan), sprinkle with ground walnuts and date sugar. - Place pan in the oven,
bake for 25 minutes no longer than 30 minutes. - Remove from the oven allow to cool for 10 minutes, then slice into

I love the idea of making these in square form, Tonya! I probably would have gone with the classic loaf, but the squares are so much easier for pick up and go snacks. Love it! And these look super delicious, too. Yum!!
