I felt guilty afterwards and needed comforting so; I had another helping. This beef stroganoff was the perfect dish to go all out with. First of all, let me just say, I Love ME SOME PASTA!! The tender beef and creamy hello portobello mushroom sauce and let’s not forget the SAHHHWEET Zima tomatoes made for the perfect meal.
Vacation is coming to a close, I’m returning home soon -my eating regimen is shot, and I’m 3 lbs heavier… Oh well, next week I’ll drown my taste buds in green smoothies, run 10 miles on the treadmill, do 500 push-ups and I should be good right?! 🙂

How To Make Beef Stroganoff With Zima Tomatoes
BEEF STROGANOFF WITH ZIMA TOMATOES

Ingredients
- Olive oil cooking spray
- 1 lb. of boneless beef stew meat
- 1½ cups of bow tie pasta
- ½ lb. portobello mushrooms, sliced
- ⅓ cup chopped onion
- 2 garlic cloves chopped
- 2 teaspoons olive oil
- 1 tablespoon Worcestershire
- ¼ teaspoon salt
- 2 tablespoons flour
- 3 cups beef broth
- ⅓ cup sour cream
- ⅓ cup Zima tomatoes (more if desired)
- Salt and pepper
- Cilantro to garnish
Instructions
- Prepare your meat: In a medium, pot add meat, Add 2 cups of beef broth with ¼ teaspoon of salt, cover and bring to boil, reduce heat to low cook for 1 hour (adding broth) as desired- until meat is tender.
- Cook pasta according to package instructions. Drain & set aside.
- While pasta is cooking, spray a large skillet with olive oil cooking spray. Heat over medium heat until hot.
- Add beef and stir-fry for 3-5 minutes until the outside is browned. Remove from skillet.
- In the same skillet, add the olive oil and heat until hot. Add the onions, garlic, and mushrooms and cook until tender about 2-3 minutes.
- Stir in flour. Gradually add 1 cup beef broth, Worcestershire, stirring until blended. Bring to boil cook and stir for 2 minutes.
- Return beef to skillet, add sour cream, mix well. If stroganoff is too thick, add more beef broth to thin out.
- Add salt and pepper to taste then add in Zima tomatoes. Cook for 5-7 minutes.
- Serve beef mixture over pasta, sprinkle with pepper and garnish with cilantro.

Never used zima tomatoes before but these look so plump and juicy! So trying this dish with chicken!
