ASPARAGUS FRITTATA WITH WILD SMOKED SALMON

This frittata is guaranteed to get you out of bed even on  Martin Luther King. Jr. Holiday.

I’m new to the frittata scene this Oh, so delicious, warm and cheesy bake was devoured by the fam over the weekend ok, so I participated in the devouring.   My family loves eggs; we eat them for breakfast at least twice a week, but this dish up’d my egg game big time #browniepointsformom. So, I did what any Mom would do; I added it to our weekender rotation +  we love wild smoked salmon especially when it’s fried it sends your palate on cloud nine with its salty sweetness and savory flavor- the use of frying entirely justified.

WILD SMOKED SALMON

Can I just say, thank goodness for cheese my go-to decoy for hiding veggies? This Frittata has the right amount of cheese, potatoes, and let’s not forget the salty sweetness of salmon, the nutty flavor of asparagus to deliver an easy, healthy, downright GOOD meal.

ASPARAGUS FRITTATA WITH WILD SMOKED SALMON

Ingredients
  • Olive Oil
  • 6 Asparagus spears cut in thirds
  • Salt and Pepper
  • 6 Eggs
  • 1 cup of shredded Muenster cheese
  • ¼ cup of shredded sharp cheddar
  • 5 Tablespoons of Extra Virgin Olive Oil
  • 5 Wild Smoked Salmon slices
  • ½ medium onion thinly sliced
  • 2 Garlic cloves chopped
  • 1 Medium baked potato diced
  • Cilantro for garnishing
Instructions
  1. Preheat oven to 400 Degrees F
  2. Drizzle olive oil over asparagus on a baking sheet. Lightly sprinkle with salt and pepper. Roast for 8-10 minutes. Set aside.
  3. Beat together eggs in a bowl (Do Not Over Beat) Lightly season with salt and pepper. Stir in Muenster cheese and Sharp cheddar cheese. Set aside.
  4. Heat 2 Tablespoons of olive oil on medium heat in a non-stick skillet add 5 salmon slices. Cook until slightly crispy on both sides. Remove from the skillet drain excess oil on a paper towel. Clean skillet.
  5. Add 3 tablespoons of olive oil to skillet. Heat until warm.
  6. Add onions and garlic cook until soft and golden brown.
  7. Add diced potato to skillet lightly season with salt and pepper. Cook for a few minutes. Then add asparagus cook until hot.
  8. Add egg mixture to skillet spread evenly, then crumble salmon on top with cheese. Cook 3-5 minutes until edges are set.
  9. Transfer skillet to oven. Bake at 400 degrees F for 12-15 minutes until the center is set.
  10. Garnish with fresh cilantro, slice, and serve.
