I’ve fallen in love at first bite. As soon as I had it, I knew I wanted more and I wanted it more often.
I was introduced to this apricot glazed salmon while out having dinner with the family a few weeks ago.
It’s was a long day that deserved an 8 pm dinner reservation and a glass of wine (shout out a white glass of wine-holla at your girl!) I usually try and have my last meal between the hours of 6:30- 7:00ish, but as I said, it was a loooooong day.
It took me longer than usual to decide which is uncommon for me, I know what I want and how I want it, I guess it’s the LEO in me, right? 🙂
Long story short and sweet, I decide on the wood-grilled salmon with teriyaki glaze topped with fresh mango salsa. It was melt in your mouth incredible it was then; I knew this would be my new salmon staple.
So here I am with my version. Because I have an abundance of apricots on hand, I swapped out the mango- can you live with that? I marinated the salmon overnight in a simple-easy marinade of teriyaki sauce, grated ginger, and garlic cloves to infuse the salmon with a deep, spicy-sweet-savory flavor.
Can we discuss these juicy, sweet apricots with crunchy black sesame seeds on top? Yeah, I know you want the juicy details. 🙂
These soft- smooth orangey loves to heighten the taste factor. Blanketed in teriyaki sauce dusted with nutty black sesame seeds sprinkled with brown sugar when cooked the skin is almost paper-thin and the inside is insanely sweet even without the addition of brown sugar these syrupy apricots are no doubt, the holy grail ingredient with an impeccable mouth feel.
Is your mind blow all over the screen? Gross! Clean it up!
Serve this apricot salmon with a glass of ginger beer, over a bed of salad or alongside steamed veggies no matter what you pair it with it will be absurdly delicious.
How To Prepare Apricot Glazed Salmon
- 2-pound salmon
- 3 apricots sliced
- 3 tablespoons peeled ginger root, grated
- 4 garlic cloves chopped
- 1 cup teriyaki sauce (low sodium, gluten-free)
- 2 tablespoons brown sugar
- ¼ teaspoon black sesame seeds
- Cover salmon with ½ cup of teriyaki sauce, 2 tablespoons of grated ginger, 2 garlic cloves. Cover and marinate overnight.
- Preheat oven to 375 degrees.
- In a medium bowl whisk brown sugar and the remaining1/ 2 cup of teriyaki sauce, 2 garlic cloves chopped and 1 tablespoon ginger to create a sauce. Stir in apricot slices with black sesame seeds.
- Place salmon in a baking dish, brush salmon with sauce.
- Bake 15-20 minutes until fish flakes easily.
- Broil on High for 2 minutes to caramelized apricots.
- Serve delicious!
