This curry soup has all the variables that make it super satisfying:

  • Hearty rich with chunks of green bananas that are the perfect stand-in for starchy white potatoes.
  • The Lentils add a burst of sweet nuttiness.
  • Bok Choy delivers a healthy dose of wellness, and freshness adding a delicious flavor profile.
  • Curry and cumin spices pack a fragrant punch that imbues the essence of the soup.

To create the magical synergy of this soup, begin with the base.

Here’s what I did:

Step 1: Get the aromatics poppin’ by sauteeing the onions and garlic, then add in the flavorful warm spices of curry and cumin to create a complicated aroma.

Step 2: Once the spices have reached their crescendo, and the next five ingredients including the green bananas and yellow lentils. Bring to a boil, reduce heat, and simmer covered for 45 minutes.

Side Note: Many curry dishes include white potatoes as a hearty ingredient, but I decided to step away from tradition and level up the recipe with a starch resistant alternative so I went with green bananas.  To learn more about green bananas and where to find them check out this post.

Step 3: As the soup simmers on medium-low heat, prepare the Bok Choy and Cilantro by rinsing clean and chopping.

Step 4: Once the green bananas and lentils are tender, stir in the coconut milk and bok choy, heat through. Toss in the cilantro, and this soup is ready to be served.

RECIPE SUMMARY:

This was my first time trying Bok Choy and I must say, I was pleased with the taste.  It added a mild sweetness with a peppery undertone that paired perfectly with the nuttiness of the yellow lentils coupled with the warm mixture of the curry and cumin spices.  After 45 minutes of cooking, the lentils were soft breaking down into a creamy velvety base with chunks of green bananas throughout making it the highlight of this yellow lentil curry soup.

Ingredients
  • 1 Tablespoon grapeseed oil
  • 1 cup of yellow onions chopped
  • 6 garlic cloves minced
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 32 oz. carton of reduced sodium vegetable broth
  • 4 medium green bananas peeled and sliced can be substituted with potatoes
  • 1½ cups dried yellow lentils rinsed and drained
  • 1½ teaspoons of pink salt
  • ⅛ teaspoon of black pepper
  • 1 can of organic unsweetened coconut milk
  • 2 cups of freshly chopped bok choy
  • 2 Tablespoons of fresh cilanto chopped
Instructions
  1. In a Dutch oven or large pot heat oil over medium-high heat. Add in onions and garlic. Cook until onions are translucent, and garlic is tender for approximately 3-4 minutes.
  2. Stir in curry and cumin powder. Cook for 1 minute until spices are fragrant. Add in the next five ingredients (through black pepper) Bring to boil, reduce heat, simmer covered for 45 minutes until green bananas and lentils are tender. Do not overcook.
  3. Stir in the coconut milk and bok choy, heat through. Add cilantro, and this soup is ready to be served.
